PALATE: Fruity flavor, sweet and balanced in bitterness with a subtle spiciness, thanks to harvesting at the optimal point of olive maturation (between the months of November and December).
AROMA: As a direct olfactory pathway we discover the aroma of the green buds of the olive tree together with nuances of chamomile and fig leaf.
Once it is in the mouth we find an assortment of fruits such as green apple and almond, accompanied by fresh vegetables such as artichoke and tomato.
ACIDITY: Max. 0.2º
QUALITY: Superior category extra virgin olive oil.
The 100 % of the juice of our olives is obtained from the first pressing with cold extraction (27º) using mechanical procedures.
